Product test: ALFA FORNI ONE – Traditional pizza
The traditional Italian brand ALFA FORNI has been supplying the German market with its pizza ovens for several years. The brand's latest addition is the ONE series. The small oven, which is designed for the family and weighs a total of 54 kilograms, is available in a wood-fired or gas version. FIRE&FOOD has taken a closer look at the wood-fired version, which was provided for testing by the manufacturer.
The structure
Screw on the feet, insert the chimney, remove the protective film, and the stove is ready to use.
Operational
The oven is heated with small logs. After just a few minutes, the temperature rises towards 400 °C. The firebricks absorb the heat well and ceramic fibers in the lining ensure that only a small amount of wood is needed for the baking process. A large pizza or several smaller ones can be placed in the oven (baking surface approx. 60 x 40 cm). The pizzas should be turned frequently to ensure even browning. The equipment includes a pizza peel and a firewood basket.
