BBQ LOVES WOOD – Grilling on the plank

Barbecue and wood are two allies when it comes to culinary enjoyment. As we all know, this begins in the nose, when the fine aroma of smoke reaches our sense of smell and simultaneously sets the palate in joyful anticipation. It is a consequence of evolution that we find the smell of phenolic compounds from charring wood combined with the smell of roasting meat extremely appetizing. However, it is not necessary to use a charcoal grill or smoker to achieve this archaic aroma composition. Planks and papers made of wood offer a welcome alternative.

Cheese Balls from the Plank – Goat cheese with roasted almonds, herbs and honey-bacon coating

Recipe by Michael Kratz: Mitch is at home in the border triangle of Germany, France and Switzerland - a region that is known for its culinary delights. After years of working in the fine dining industry, he has now specialized in grilling and smoking in a wide variety of ways. He likes to pass on his experience in grilling courses.

Ingredients (for 5 people):

• 200 g goat cheese, cut into 5 pieces of 40 g each
• 5–10 slices of bacon, number depending on the length of the slices
• Herb mix of fresh herbs such as thyme, rosemary,
Sage, oregano, basil
• 2 cloves of garlic
• 1 red onion
• 100 g crushed almonds

For the glaze:
• 1/3 maple syrup
• 2/3 liquid honey

Aside from that:
• 1 wooden plank of black cherry from the Black Forest
(or other wood type of your choice)

Preparation:

Roast the almonds in a pan without adding any fat. Finely chop the herb mix, garlic and onion.
Arrange the bacon slices on a work surface in 5 crosses. Place almonds, vegetables and herbs in the middle of each. Place the goat cheese on top and wrap the bacon slices around it.
Brush with the honey mixture and grill indirectly at 200 °C for about 7 minutes. If necessary, brush with the glaze again before serving.
