The DRY AGER DX 500 Premium S is a plug-in, fully aging professional cabinet that requires no water connection or tank and looks as good as it performs. A timelessly modern design on the outside – high-precision, sophisticated technology on the inside: craftsmanship meets high tech. Thanks to its compact size, the DRY AGER DX 500 Premium S is particularly suitable for dry aging at home or for restaurants and butcher shops with limited space in their sales area. The device can be placed freestanding or integrated into a wall.

The tinted insulated glass door protects the meat from UV light. The meat ages on the bone in the cabinet at approximately 85% humidity and a temperature of 2°C. The precise electronic control of the DRY AGER DX500 ensures constant temperature maintenance, which can be adjusted in exact 0.1°C increments. HumiControl® also allows for highly precise regulation of the humidity from 60% to 90%, even without a water connection. Together with the integrated DX AirReg® system, this ensures a perfect microclimate, optimal airflow, and continuous disinfection, even with large fluctuations in ambient temperatures.

The DX 500 features an activated carbon filter and an active UVC disinfection box, which completely disinfects the air in the cabinet once a minute. Dangerous bacteria and unwanted germs have no chance. The weight loss of beef during on-the-bone aging is surprisingly low. After approximately four weeks of aging in the DRY AGER, it is only approximately 7 to 8%, and after six weeks, approximately 12%. These values ​​are much lower than in most other aging cabinets. The DRY AGER is also suitable for producing dry-aged beef. It can be used for storing and aging salami, ham, and other types of meat, as well as for cheese storage.

Completely disinfected every minute
The DX 500® Premium is, alongside the DX 1000® Premium, the only professional ripening cabinet in the world with an activated carbon filter and an active UVC disinfection box, which completely disinfects the air in the cabinet once a minute, so dangerous bacteria and germs have no chance.


Highly precise humidity control
Thanks to HumiControl®, the humidity can also be precisely regulated from 60% to 90% in 0.5% increments, just like the larger DX 1000® Premium, without a water connection or a water tank. Together with the integrated DX AirReg® system, this ensures a perfect internal microclimate, optimal airflow, and continuous disinfection, even with large fluctuations in ambient temperature.


Micro-control of temperature
When dry aging, we recommend aging the meat on the bone at approximately 82–85% humidity and a temperature of 1 to 2°C. The precise electronic control of the DRY AGER DX 500® Premium ensures constant temperature control, which can be adjusted in precise 0.1°C increments from 0 to +25°C.


Surprisingly low tire loss
The weight loss of fresh beef due to bone-in aging is only approximately 7-8% after 4 weeks of aging in the DRY AGER® DX 500® Premium and approximately 12% after 6 weeks. These internal measurements are significantly lower than in most other aging cabinets on the market – another argument in favor of the DRY AGER®!


The all-rounder
The DRY AGER® isn't just suitable for dry-aging beef. Thanks to its individually adjustable temperature and humidity settings, it can also be used for aging and storing sausages such as salami, ham, and other meats, as well as for storing cheese.


Perfect UV protection
To protect the valuable contents from harmful UV light, the insulated glass door of the DRY AGER, held by an elegant stainless steel frame, is tinted (metal-coated).

Ich bin super begeistert über dieses tolle Gerät. Absolute Spitzenklasse. Nicht günstig, aber meiner Meinung nach ist es jeden Cent wert. Schönes Design, einfache Bedienbarkeit, 40 voreingestellte Programme. Also nur aussuchen was man machen möchte und loslegen. Inkl. Dry Ager Bibel, über 300 Seiten komprimiertes Fachwissen, Bebilderung und Rezepte.

Der Dry Ager von Landig ist ein Gerät der absoluten Spitzenklasse. Meine Erwartungen wurden mehr als nur übertroffen, ich bin absolut begeistert. Vor Allem die vorgefertigten 40 Programme finde ich klasse. Optisch sehr ansprechendes Design. Mit der Dry Age Bibel ein problemlos bedienbares Gerät, in dem einem auch extrem viel Basiswissen vermittelt wird. Also ich würde das Gerät jederzeit wieder kaufen.
