
Flash marinated skewer of skrei and salmon

Ingredients
• 100 g salmon, diced
• 100 g Skrei, diced
• 1 tbsp soy sauce
• 1 tbsp teriyaki sauce
• Juice and zest of ½ organic lemon
• a few sprigs of dill, coriander, parsley with stems finely chopped (most of the aroma is in the stems)
• 1 almond-sized piece of ginger, chopped
• ¼ garlic clove, grated
• 1 chilli pepper, deseeded and chopped (optional)
• ½ l iSi bottle
• 1 iSi cream charger
• Rapid Infusion Set
preparation
➊ Mix the fish cubes with all the other ingredients in a bowl and fill the ½ liter iSi bottle with the marinade. Screw on the Rapid Infusion Set, shake two or three times and aerate everything with an iSi cream charger.
➋ Leave to infuse in the fridge for 1–1 ½ hours. Pull the lever of the iSi bottle all the way through and quickly release the pressure.
Remove the fish cubes, put them alternately on wooden skewers and grill them on the grill until translucent.
➌ If desired, arrange on a bed of vegetables and optionally serve with rice and a dip.
