Ingredients
• 1 buffalo roast beef, approx. 1 kg
• 1 – 2 untreated oranges
• Salt
• Smoking chips as required
For the marinade:
• 200 g honey
• 2 tsp cardamom, roughly chopped
• 1 tsp juniper berries, roughly chopped
• 2 tsp long pepper, coarsely chopped
preparation
➊ Salt the meat lightly, cut the oranges into slices and place them on the indirect grill surface. Mix the ingredients together to make the marinade.
➋ Prepare a grill with a lid for direct and indirect grilling and grill the roast beef on all sides over the direct heat.
➌ Then place on the orange slices, adjust the temperature of the grill to 110 °C, let the meat reach a core temperature of 51 °C and regularly brush with the marinade.
➍ Then wrap in aluminum foil and let rest for 5 – 10 minutes.
Richard's BBQ tip: If you want to give the roast beef a smoky note, add smoking chips while grilling and enjoy a glass of gin with the meat.
