
Hearty lentil soup from the Dutch oven

Ingredients
• 200 g dried lentils
• 300 g smoked bacon
• 100 g potatoes
• 1 bunch of soup greens
• 1 bottle of beer (type of choice) and water (amount as desired
• a bit of salt
• some fat or oil
• 1 onion
• 500 g fresh mushrooms
• 1 smoked Mettwurst or similar, sliced
preparation
➊ First let 20 briquettes glow through and in the meantime dice the bacon and vegetables.
➋ Distribute all the briquettes under the Dutch oven and fry the bacon well. Then remove the bacon and fry the potatoes lightly in a little fat, then remove them and steam the vegetables. Now put all the ingredients in the Dutch oven and pour in the beer. Then fill the Dutch oven with water until the lentils are well covered.
➌ Place 3-4 briquettes under the Dutch oven and spread the rest on the lid. Let the lentil soup cook for a good 2 hours, checking occasionally to see if there is any liquid left and adding water or beer if necessary. The longer the soup cooks, the better the taste. At the end of the cooking time, there should only be so little liquid left that you could eat it with a fork.
➍ Season with salt before serving if necessary.
