Fish burger

Ingredients

• 4 trout fillets
• 1 egg
• 200g mozzarella
• 1 onion
• 2 tomatoes
• Salad leaves
• fresh dill, chopped
• 4 grain rolls

for the avocado cream:
• 2 ripe avocados
• 2 cloves of garlic
• 50 ml oil
• 1 lemon
• Salt
• Pepper
• Sugar


Can also be prepared easily on a Swedish fire in a cast iron pan!

preparation

For the avocado cream, halve the avocados and scoop out the flesh with a spoon. Finely chop the garlic. Squeeze the lime over the avocado flesh, add the oil and garlic and mix everything together. Season to taste with salt, pepper and sugar.

Remove the skin from the trout fillets. Finely dice the fish meat with a knife and mix with the egg and dill. If the mixture is too runny, just add a little breadcrumbs. Form into fish patties and fry in the preheated grill pan.

Halve the grain rolls and lightly toast the inside. Cut the tomatoes, onions and mozzarella into slices.

To serve, assemble the fish burger in the following order from bottom to top: seed bun, avocado cream, fish patty, mozzarella, onions, avocado cream, tomato, lettuce leaf, seed bun.
