
Flaming Bacon Sandwich

Ingredients
• 1 ½ kg pork belly
• some maple syrup
• BBQ rub of your choice
• 3 slices of cheddar cheese per sandwich
• 1 slice of bread per sandwich
• 1 pickled cucumber (sweet and sour)
• BBQ sauce of your choice
• 4 slices of bacon
• green jalapeño rings, pickled
• 3-4 hickory wood chips (or fruit wood such as apple, pear or cherry for mild smoke flavor
For the Sriracha chili mayonnaise:
• 8 tbsp mayonnaise
• 2 tbsp Sriracha chili sauce
• ½ small red onion (very finely chopped, for the perfect consistency of the finished mayonnaise)
• 1 small garlic clove, pressed
• 1 dash of lime juice
• Salt
• Pepper
• approx. 1 tbsp fresh tarragon, chopped
preparation
➊ Remove the rind from the pork belly, sprinkle the BBQ rub on all sides, drizzle with a little maple syrup and massage the rub into the meat.
➋ Mix the Sriracha chili mayonnaise from the listed ingredients and season with salt, pepper and tarragon.
