
Grilled chicken with miso (Tori-niku no miso-yaki)

• SShichirin grill, grill skewers
Ingredients
• 4 chicken breasts
• 8 tbsp red miso
(fermented soybean paste)
• 4 tbsp sake
• 1 pinch of cayenne pepper
preparation
➊ Mix miso and sake to make a thick marinade and season with cayenne pepper.
➋ Trim the chicken breasts, cut into thin slices, pat dry and brush all over with the marinade. Marinate for 30 minutes.
➌ Take 2 skewers per piece of meat and skewer the meat in a wave-like pattern.
➍ Dab off the marinade with kitchen paper and grill the chicken breasts on the grill at medium heat for about 30 minutes, turning occasionally.
