Ingredients
• 1 kg (28-30) prawns, raw and in shell
• 3 cloves of garlic
• 10 g salt
• 3 g pepper
• 5 g ginger, grated
• 4 tablespoons olive oil
• 1 lime, cut into eighths
• Smoking wood: Apple
preparation
➊ Cut the shrimps on the back and remove any remaining intestines.
➋ Make a marinade from the spices and marinate the shrimp in it for 2 hours.

Seafood and shellfish are easy to smoke, and if you leave them in the shell, the meat is protected and becomes wonderfully juicy and tender. Grill and chef Markus Heusel has refined the little protein bombs with smoke aromas from apple wood. Served with a cool, dry white wine or a tart pilsner and fresh white bread, the light summer snack is perfect.
