Ingredients
• 700 g Iberico Secreto
• 100 g oyster mushrooms,
cleaned and ready for cooking
• 4 tbsp capers
• 2 shallots, finely chopped
• 1 pack of soft goat cheese
• 3 tablespoons honey
• 1 tbsp BBQ rub for pork (here: Pitmaster X Pork Rub)
• 1 kg floury potatoes
• 250 g butter (for potatoes and mushrooms)
• 4 sprigs of fresh thyme
preparation
➊ Boil the potatoes until tender. Then place them in a greased casserole dish, spread the butter generously on top and between the potatoes (reserve 2 tablespoons of butter for the oyster mushrooms), and finish with the thyme sprigs. Place them on the indirect grill and bake at 250°C until golden brown.
➋ Then prepare the grill for direct grilling and heat to 140 °C
Rub the meat with the BBQ rub and grill for 6–8 minutes, until it reaches an internal temperature of 65°C. Let it rest for a moment.
➌ For the topping, melt the remaining butter in a pan and sauté the shallots until translucent. Add the capers and oyster mushrooms and cook for another 5 minutes.
➍ Cut the meat into strips and arrange them on top of the crispy baked potatoes. Sprinkle the oyster mushrooms over the meat, then crumble the goat cheese and drizzle with honey.
