
Italian Parmesan Fried Eggs
Ingredients
• 2 eggs
• approx. 20 g Parmesan cheese,
freshly grated
• some olive oil
• Salt pepper
preparation
Bring the grill to temperature and place a griddle (cast iron plate) on top. Separate the eggs, taking care not to damage the yolks. Season the egg whites with salt and pepper to taste and mix. Coat the cast iron plate with olive oil and fry the egg whites on it until they are completely set. Carefully place the egg yolks on
Place on the fried egg white and add a small pinch of salt. Grate plenty of Parmesan cheese over the egg. Serve on a plate; white bread such as ciabatta or rustico goes best with this dish. The nice thing about this dish is that the egg yolk is still wonderfully runny.
