Ingredients
For the zucchini boats:
• 2 courgettes
• 400g hummus
• 100 g mushrooms of your choice (e.g.
King oyster mushrooms, mushrooms)
• Salt pepper
• Rapeseed oil or olive oil
For the topping:
• 1 small can of chickpeas
• 1 tbsp sesame paste (tahini)
• 100 g cherry tomatoes, halved
• 2 tbsp pine nuts,
without adding fat in a
Pan or on the grill plate
roasted
• 1 tbsp sweet chili sauce
• 2 cloves black garlic,
cut in slices
• 2 tbsp spring onions,
cut into rings
• 1 tbsp rapeseed oil or olive oil
• Juice and zest of 1 organic lime
• Salt pepper
preparation
➊ Halve the zucchini lengthways and remove the flesh. Salt the zucchini a little and grill the cut surface. Fry the mushrooms in hot oil in a pan or on the grill plate (i.e. at high heat), season with salt and pepper and set aside.
➋ Cut a little bit off the bottom of the grilled zucchini so that it stands well on the wooden plank. Place the grilled zucchini on the wooden plank and fill it with the hummus and mushrooms.
➌ Either heat the plank on a side burner until it starts to smoke or place it in the grill on direct heat. Then leave the plank in the grill on indirect heat for about 15 minutes.
➍ For the topping, mix all ingredients together and season with salt and pepper. Serve the stuffed zucchini with the topping.
