Ingredients
• 1 roll of ready-made pizza dough (alternatively homemade)
• 100g Burrata Stracciatella
• 1 handful of arugula
• 1 tbsp pine nuts
• Zest of 1 untreated lemon
• 2 chicken thighs
• 1 tbsp gyros seasoning (here: from Pitmaster X)
• 3 tbsp olive oil
preparation
➊ First, preheat the pizza stone on the grill to 250°C. Then mix the gyro seasoning with 2 tablespoons of olive oil and marinate the chicken thighs in it.
➋ Cut out smaller circles from the pizza dough, brush the tops with olive oil, and fold the dough bases in half. Then bake the mini calzoni on a pizza stone until golden brown.
Roast the pine nuts in a pan on the hot grill (e.g. on the Sizzle Zone).
➌ Grill the chicken thighs until they reach an internal temperature of 75°C. Remove from the grill and let rest briefly, then remove the bones and cut the meat into small pieces.
➍ Open the mini calzoni and fill with burrata, arugula, chicken, pine nuts and lemon zest.
