Ingredients

1 roll of ready-made pizza dough (alternatively homemade)
• 100g Burrata Stracciatella
• 1 handful of arugula
• 1 tbsp pine nuts
• Zest of 1 untreated lemon
• 2 chicken thighs
• 1 tbsp gyros seasoning (here: from Pitmaster X)
• 3 tbsp olive oil

 First, preheat the pizza stone on the grill to 250°C. Then mix the gyro seasoning with 2 tablespoons of olive oil and marinate the chicken thighs in it.

Cut out smaller circles from the pizza dough, brush the tops with olive oil, and fold the dough bases in half. Then bake the mini calzoni on a pizza stone until golden brown.
Roast the pine nuts in a pan on the hot grill (e.g. on the Sizzle Zone).

Grill the chicken thighs until they reach an internal temperature of 75°C. Remove from the grill and let rest briefly, then remove the bones and cut the meat into small pieces.

Open the mini calzoni and fill with burrata, arugula, chicken, pine nuts and lemon zest.
