
Paella negra with salmon and prawns

Ingredients
• 400 g paella rice
• 800 ml water
• 160 ml olive oil (40 ml per serving)
• 2–3 envelopes
Paella spice mix
• Salt and pepper
• 400–600 g salmon
• 400–600 g shrimp
• 800 g vegetable mix with
Beans and corn
• 4 tomatoes
• 1 small bag of black ink
from the Octopus
For decoration:
• Fresh lemon wedges
preparation
➊ Add the oil to the center of the pan and heat gently. Lightly fry the salmon and shrimp, then set aside. Then, sauté the chopped tomatoes and the vegetable mixture with the beans and corn in the pan.
➋ Add the paella rice and fry lightly. Add the paella seasoning mix, followed by the water and the black octopus ink to the pan and stir well. Season with salt and pepper. Then simmer gently for about 20 minutes – do not stir during this time!
➌ Turn off the gas burner and let the whole thing rest for another 5–10 minutes.
➍ Garnish the finished paella with the previously seared salmon and shrimp and garnish with lemon wedges, if desired. Enjoy!
Tip: For a fish paella, you can also use about 25% of the liquid in the form of white wine instead of water.
