Ingredients
For the pulled sweet potato burgers:
• 1 medium sweet potato
• 1-2 tsp peanut oil
• Salt
• Pepper
• BBQ sauce as desired
• ½ tbsp goat’s cheese
• 1 burger bun
• Cole slaw
For the spicy sweet potatoes as a side dish (Hot Wheels):
• 1 kg sweet potatoes
• heat-resistant vegetable oil for
the grill plate
For the spice mixture:
• 2 tablespoons brown sugar
• 2 tbsp sweet paprika
• 2 tbsp Paprika de la Vera
• 1-2 tsp dried chili peppers,
finely chopped (amount according to
desired level of sharpness)
• 2 tsp dried oregano
• 2 tsp curry type “English”
• 1 teaspoon black pepper,
freshly ground
• 3 tsp fresh rosemary,
finely chopped
• 1 tsp freshly grated
Lemon peel
• 4 tablespoons olive oil
• Salt to taste

➊ For the vegetarian burgers: Peel the sweet potato and grate it coarsely. Heat an iron pan on the grill and add the oil. Add the grated sweet potato and fry, turning constantly. Season with salt and pepper and add a little BBQ sauce. If necessary, leave to cook a little longer in a more moderate temperature zone if you don't want the sweet potato to have much bite.
➋ Toast the burger bun and spread the bottom with the goat's cheese. Spread the sweet potatoes on top, then some coleslaw, and finally put the bun lid on.
➌ For the side dish: Peel the sweet potatoes and cut into 5 mm thick slices. Mix the ingredients for the spice mixture together with the olive oil in a large bowl and mix with the sweet potato slices.
➍ Equip a grill with a lid with a closed grill plate and preheat to approx. 180° C. Spread the sweet potato slices on the grill plate, which has previously been lightly coated with oil; they can overlap slightly. Grill for around 20 minutes, turning occasionally. If there is a problem with space, grill the slices in portions and keep them warm until serving.
