Ingredients

• 5 Rock sausages “Whisky in the Jar” or your favorite bratwurst with cheese
• 25 large tortilla chips
• Red Onion Jam
• BBQ sauce as desired
• Cress or spring onions as topping

For the red onion jam:
• 1 kg red onions, cut into thin rings
• 60 ml olive oil
• 2-3 tablespoons BBQ rub as desired, here “Whisky in the Jar”
• 200 g brown sugar
• 200 ml balsamic vinegar
• 50 ml whisky as desired
• 50 ml maple syrup

preparation

For the red onion jam, sauté the onion slices in olive oil until translucent. Deglaze with the vinegar and reduce for about 30-40 minutes, stirring occasionally. Stir in the BBQ rub, sugar, whiskey and maple syrup and continue to reduce until the desired consistency is reached. Finally, season with BBQ rub. Pour into clean, sterilized jars and store in a cool place.

Grill or smoke the sausages and cut each into 5 slices. Put a portion of red onion jam on each tortilla chip, place the sausage on top and garnish with BBQ sauce and cress/
Top with spring onions.

Serve as finger food.

We processed this rub together with Kalieber into a delicious bratwurst and created a real rock sausage. The red onion jam is a delicious topping for finger food, burgers, wraps and much more. Easy and quick to prepare and filled into clean, sterilized jars, it has a long shelf life."
