
Ostrich Pinwheel

Ingredients
• 2 ostrich steaks
• 2 handfuls of rocket
• 100 g cream cheese
• 50g cheddar cheese
• 2 tbsp BBQ spice mix for beef (here: Best Beef Rub Royal Spice)
• Salt and pepper to taste
• Wooden skewers (soaked in water to prevent burning)

➊ Depending on how thick the steaks are, either give them a butterfly cut or flatten them straight away. Then spread the cream cheese on top of the meat and season generously with BBQ seasoning.
➋ Spread the cheddar on top and cover thinly with rocket.
Roll up both steaks, making sure to work as tightly as possible to achieve a pinwheel shape. Secure the rolls with wooden skewers at a distance of about 2 cm from each other.
➌ Now cut into pieces using a knife that is as sharp as possible and applying little pressure so that the filling does not ooze out.
➍ Set the grill to medium, direct heat and grill the pinwheels for about 5 minutes per side. Serve immediately.
