Waffles with apples

Ingredients

For 4 people

• 500g flour
• 2 teaspoons of baking soda
• 175 g melted butter
• 120g sugar
• 4 eggs
• ½ l milk
• 4 apples
• 100g sugar
• 50g butter
• 200 ml cream
• 1 tsp cinnamon
• 1 tsp ginger powder

preparation

Peel the apples and cut into slices. For the waffle batter, mix the flour, baking powder and sugar, then stir in the melted butter and eggs. Gradually add the milk and stir until the batter is no longer runny.

For the caramelized apples, pour a thin layer of water into the Dutch oven and add the sugar. The water ensures that the sugar is evenly distributed and does not burn when melting. Bring this mixture to the boil and allow it to thicken into a syrup, do not stir. As soon as the sugar mixture starts to turn brown after the water has evaporated, add the butter. Stir well and add the cream and spices. Then put the apple slices in and simmer in the caramel until soft.

For the waffles, use a well-seasoned waffle iron - if it hasn't been used very often, brush the inside with oil. Put the batter in the iron - don't overfill it - the batter will expand - and bake on both sides over the hot coals for 4 to 5 minutes.
Serve with the apples and whipped cream.
