Ingredients
• 300 g potatoes
• 200 ml broth
• 50 g sour cream
• 1 pinch of nutmeg
• 30g butter

Do you have potatoes left over from a barbecue? Or from potato salad? Perfect! Then we can use them to make a wonderfully light potato espuma for Halloween.
➊ Simply remove the potatoes from their skins and cut them into small pieces. Fry them in a pan with the onions. Then deglaze with a little stock and simmer for a while so that the onions become soft and the potatoes are warm - they were already cooked. Then add the sour cream, salt and pepper, a little nutmeg and put it in the blender. But not for too long, otherwise the potato starch will bind too much. Be careful: the whole thing is hot!
➋ Pour the hot mix through a sieve into the Isi, screw on the lid and screw on a gas cartridge. Shake well. WARNING: The steel Isi bottle also gets hot!
➌ And now you have a wonderfully light potato espuma, which can be served as a soup foam or as a side dish for fine cuts of meat.
➍ Depending on the potato, you may need to adjust the liquids slightly. The mixed mash should not be too liquid, but should still run through the funnel into the Isi.
