Wraps with chili beans and cheese

Ingredients
• 3 ready-made tortilla wraps
• 1 can of red beans (400 g)
• 200 g Cheddar cheese or
another spicy cheese
• 1 cup sour cream
• 1 small onion,
cut into small cubes
• 1 bunch of coriander, finely chopped
• 1 tsp cayenne pepper
• Cumin
• Salt
• Pepper
preparation
➊ Heat up the grill. The charcoal is ready for grilling when a white layer of ash has formed all around it. Put the beans and onion pieces into a pot, along with some of the liquid from the can.
➋ Season everything with salt, pepper, cumin and cayenne pepper. Place the pot on the hot grill and let everything simmer until the liquid has reduced and the chili beans have a mushy consistency.
➌ Toast the wraps a little on the grill so that they become softer and easier to roll without breaking. Then take the three wraps off the grill and spread the beans and grated cheese on all of them.
➍ Finally, sprinkle with coriander and roll up each wrap. Wrap in aluminum foil and grill again for 20-25 minutes at 170 °C. Serve hot with sour cream.
