Lobster roll

Ingredients

For 2 people

• 2 hot dog buns
• 20g butter
• 400 g lobster meat,
cooked
• 100g mayonnaise
(preferably yourself
made)
• Juice of 2 lemons
• 100 g celery,
finely chopped
• 1 small onion,
finely chopped
• 1 garlic clove,
finely chopped
• ¼ tsp chili powder or
Cayenne pepper
• Salt
• Pepper

For the mayonnaise:
• 1 very fresh,
room temperature
egg yolk
• ½ tsp mustard
• 1 tsp white wine vinegar
• 1/8 l oil
• Salt
• Pepper

Variation: add chopped fresh chives or tarragon and crispy grilled bacon slices.


preparation

Mix the egg yolk with the mustard, white wine vinegar, salt and pepper. Slowly add the oil and stir until you have a creamy mayonnaise. Put the mayonnaise, celery, onion, garlic and spices in a bowl and mix, season with lemon juice. Cut the lobster meat into small pieces and stir into the mayonnaise.

Cut the hot dog buns open and toast them on the grill. Spread butter on top and put the filling into the buns.
