Mussel variations flavoured with white wine

Ingredients

• 500 g cockles or clams
• 500 g mussels (alternatively
other mussel species of your choice)
• 750 ml white wine, preferably
with a fruity note
extra virgin olive oil
• 50 g garlic
• 50 g basil
• 50 g coriander
• 50 g parsley
• Salt flakes

preparation

Wash and clean the mussels thoroughly and remove any damaged or opened mussels.

Place in a fireproof bowl and pour over the white wine and a little olive oil. Cover the bowl with aluminum foil and simmer on the OFYR for 8 minutes until the mussels have opened. Turn the bowl during cooking so that the mussels are cooked evenly.

Finely chop the garlic and fresh herbs and add to the mussels. Then serve the mussels.
