Ingredients

For the pork fillet:
• 1 pork fillet, approx. 800 g
• 100 g breadcrumbs
• 200 g soft butter
• 4 egg yolks
• ½ red onion
• 2 cloves of garlic
• approx. 70 g herb mix
from fresh herbs of your choice
• 1 dash of lemon juice
• Salt
• Pepper
• 1 cedar plank,
not watered

preparation

Mix the butter with the breadcrumbs and egg yolk. Season with salt and pepper and add a little lemon juice. Finely chop the onion, garlic and herbs and add to the butter mixture, kneading everything well.

Spread the mixture on baking paper to form a rectangle the length of the fillet and allow it to harden a little – this works best in the fridge.

Rinse the fillet with cold water, pat dry and season with salt and pepper. Place on the herb coating and roll it up. Seal the mixture well all around and press down.
