Wagyu Skirt
Ingredients
• 1 Wagyu Skirt
• 1 each of thyme, tarragon
and rosemary sprig
• Salt
• Sugar
• black pepper, fresh
ground
• BBQ sauce (eg Bone
Sucking Sauce)
• Young garlic
For the Cumberland Yaki:
• 150 ml redcurrant jelly
• 1 tsp English mustard powder
• 2 cl cognac
• 2 cl soy sauce
• Shell abrasion of 1 each
untreated lime
and orange
• Salt
• Cayenne pepper
preparation
Salt and sugar the meat and sprinkle generously with black pepper. Then cover with herbs and brush with a little barbecue sauce. Cook in the smoker at 52° C for about ½ hour. In the meantime, mix the redcurrant jelly with the mustard powder for the Cumberland Yaki. Add cognac, soy sauce and the remaining ingredients and mix well. Take the meat out of the smoker and grill it on both sides. Then cut into slices against the grain and serve with the Cumberland Yaki.
