As colorful as spring: There are no limits to the choice of ingredients for paella - anything is possible! But always use good, absorbent short grain rice. For meat paella, around 25 percent of the liquid can be added in the form of red wine instead of water.
With the warm temperatures, outdoor grilling fever is also increasing again. Fans of outdoor cooking are flocking outside to celebrate natural cooking in the open air with family and friends. Die-hard grillers probably first think of the rustic, open fire pit and the classic charcoal grill. But there is another variant of outdoor cooking that combines tradition with culinary variety: cooking in a paella pan.
Preparing paella is not only a social event in Spain that brings people together in nature. Here too, paella with its simple but racy recipes ensures enjoyable get-togethers and southern flair. The range of the rice dish is not limited to the original "Paella Valenciana". Countless variations with meat, fish or sweet paella dishes with fruit ensure a sunny mood! Recipe for "Paella with chicken breast fillet"
Ingredients for 4 persons):
• 350-400 g paella rice
• 800 ml water
• 160 ml olive oil (approx. 40 ml per portion)
• 400 g chicken breast fillets
• 150 g carrots, cut into small cubes
• 160 g peas
• 240 g green beans
• Broad beans and other vegetables as desired
• Paella spice mix
(alternatively: 2 g paprika powder and 1.5 g saffron)
• Salt and pepper to taste
• fresh lemon slices for decoration
Preparation:
1. Pour the oil into the middle of the pan and heat it slightly. Fry the meat cut into pieces (approx. 100-200 g per person) in the pan. Then add the chopped carrots, peas, green beans
and add vegetables as desired (e.g. broad beans, Brussels sprouts, leeks) and sauté everything.
2. Add the paella rice (max. 100 g of rice per person) and fry gently. Add the paella spice mix and then the water to the pan and stir everything well. Season with salt and pepper. Then let it cook gently for about 20 minutes, do not stir during this time!
3. Turn off the gas burner and let the whole thing rest for another 5-10 minutes.
4. Decorate the finished paella with lemon slices and serve. Enjoy!
