Entrance Twisted

Ingredients

for 4 people

• 1 Wagyu entraña
• coarser sea salt
• Juice of 1 lemon

For the flatbread pizza
(Torque):
• 1 thin flatbread
• some chopped parsley
• Olive oil
• 1 garlic clove, crushed
• Salt
• Provolone (Italian hard cheese)

For the Chimimates:
• 2 garlic cloves, cut into thin
Sliced
• 100 g flat-leaf parsley, chopped
• Chili flakes (spiciness and quantity
as desired)
• 1 orange beef tomato,
diced
• 100 ml olive oil
• Salt
• Juice of 1 lemon
• 1 tablespoon of sugar


preparation

For the chimimate, mix all ingredients together and let it rest, covered, for at least 1 hour before serving so that the flavors can develop.


Portion the meat and cut each piece into three strips of equal thickness, connect the ends on one side with a toothpick and secure. Braid the three strands together and finally secure the ends with a toothpick. Season each meat braid with lemon juice and salt and grill on each side at a medium heat for about 4 minutes, after turning, coat the top side with the Chimimate.


Halve the flatbread and cut each half into 4 pieces. Mix the parsley and garlic with a little olive oil and season with salt. Spread the mixture on the flatbread pieces and grate the cheese over them. Toast briefly on the grill and serve with the meat.
