preparation

Wash and quarter the fennel and apples, removing the core from the apples. Roast on all sides on the grill, but do not cook through so that it retains a slight bite. Then remove from the grill and cut everything into even strips or pieces. Mix in a bowl with olive oil, chili, parsley and sprouts and season with salt and pepper.

Set up the grill for direct grilling and set it to medium heat. Add some smoking wood to the embers.

Oil the fish, season with salt and pepper and grill over direct, medium heat on the skin side only. Then smoke until the fish is cooked but still slightly translucent.

To serve, spread some apple-fennel mix on the plate and place the fish on top.
