Ingredients
• 1 skirt steak
• 7 cloves of garlic
• 3 tbsp parsley
• 1 tbsp coarse salt
• 1 teaspoon freshly ground pepper
• 125 ml olive oil
• 10 slices of salami
• 10 slices of prosciutto
• some Pecorino, grated
• some Parmesan, grated
• Butcher's twine
• Skewers
preparation
➊ Heat 10 briquettes in a chimney starter. In the meantime, chop the garlic and parsley and mix well with olive oil, salt and pepper.
➋ Trim the skirt and straighten it into a rectangular piece of meat with even edges. Place it on the worktop and spread the olive oil mixture on top. Cover with salami and prosciutto, then sprinkle with pecorino and parmesan.
➌ Then roll the skirt into a roll and secure it with the skewers, cut the roll into thicker slices and tie each slice with butcher's twine.
➍ Place the prepared briquettes under the inverted lid of the Dutch oven and let it get nice and hot. Grill the skirt slices on both sides until the core temperature reaches 56 °C.
